Mrs Flott’s Homemade Chicken Penne is a comforting, flavorful meal made with tender chicken thighs slow-cooked in a marinated tomato sauce with onions and warming spices, then served with penne pasta.

Ingredients

  • 1½ pounds boneless, skinless chicken thighs

  • 12 ounces penne pasta

  • 2 cups crushed or strained tomatoes

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1 teaspoon Italian seasoning

  • ½ teaspoon paprika

  • ½ teaspoon garlic powder

  • Salt and black pepper, to taste

  • ½ cup chicken broth or water

  • Fresh parsley or basil and grated Parmesan, optional

Directions

  1. Season the chicken thighs with salt, pepper, paprika, garlic powder, and Italian seasoning.

  2. Warm olive oil in a large pot or slow cooker-safe skillet. Lightly brown the chicken, if desired.

  3. Add the onion and garlic, then pour in the tomatoes and broth. Stir to combine.

  4. Cover and slow-cook on LOW for 4–6 hours, or until the chicken is tender and cooked through.

  5. Shred or slice the chicken and stir it back into the sauce.

  6. Cook the penne according to the package directions. Drain and toss with the chicken tomato sauce.

  7. Garnish with fresh herbs and Parmesan, if desired. Serve warm.
